Sweet Yeast Dough

1 Tbsp. yeast
¼ cup warm water
1 cup milk, scalded
1 ½ tsp. salt
½ cup sugar (less if using sweet filling)
½ cup shortening
2 eggs, beaten
4½ cups sifted flour.

Soften the yeast in the lukewarm water. Scald the milk, cool and add shortening, salt and sugar. Add flour to make a thick batter. Add yeast and eggs. Beat well. Add enough flour to make a soft dough. Cover and let rest 10 – 15 minutes. Knead well until surface is smooth and satiny, and is covered with tiny blisters. Place in oiled bowl. Cover and let rise until slightly more than double in bulk. Punch down and let rise 30 minutes. Punch down and let rest 10 minutes. Shape into desired rolls. Cover and let rise until doubled in bulk. Bake at 375 degrees for 20 – 25 minutes. I use this for cinnamon rolls or any sweet bread.
